Below you will find questions that are frequently asked of us. We add questions to this site as often as possible.

Can I change or cancel my order?

You cannot change an order once you have placed it. If there is an error, you must call us to cancel the order and place it again.

You must cancel an order within the first 24 hours after it is placed. To cancel your order, call Customer Support at 713-501-5058.

How do you clean (Purged) the crawfish you sell?

We place our crawfish into a holding tank, which has been filled with fresh well water.

Crawfish are confined in the water for 24 hours. This allows the exoskeleton and the intestine to be cleaned.

Step two is to spray the crawfish down and bag and weigh them.

Note cleaned (sometime called purged crawfish) will be priced .25 cents higher.

 

How do I keep them alive?

The secret lies in their gills. Crawfish have adapted a really cool ability to extract oxygen from the atmosphere through their gills. As long as their gills remain moist, they can get all of the oxygen they need without being submerged. Therefore, keep the crawfish alive by spraying water on them. DO NOT keep them in water.

Keep live crawfish cool/moist between say 40 to 50 degrees F. by using wet towels on top of live crawfish bags……KEEP OUT of direct sun light which can dry them up.

What are the different types of Crawfish?

There are 32 recognized species of crawfish in Louisiana, but only two are considered economically important—red crawfish and white river crawfish. The red crawfish comprises more than 80 percent of the industry catch. While there is very little difference in the taste of the two.

What are the different size of Crawfish?

A select or No. 1 grade crawfish 7-14 crawfish per pound. This is the large crawfish and normally have a large price tag.

No. 2 grade being slightly smaller, ranges from 15-22 crawfish per pound.

No. 3 or peelers grade ranges from 23-30 crawfish per pound.

Mix grade are No.1 and No. 2's.

How large is a sack of crawfish?

The average sack of crawfish will range from 33-40 lbs.

How are crawfish priced? 

Pricing is set between the Farmer and the Large processing plants (which they love to denies).

The large plants buy tons of crawfish from the local farmer daily, thereby controlling the market prices. (Much of the Plant's crawfish are used for peeling and shipping.)

Smaller plants and wholesale delivery trucks are normally offered crawfish, but at an increased price. Added to that price will be fuel cost, other overhead and profit, therefore pricing changes maybe seen daily.

What months out of the year can I purchase live crawfish?

Earliest we can get Live Louisiana crawfish is Mid November and the latest is the July 4th weekend.

How do I purge my crawfish myself?

The cardinal rule is to thoroughly wash the crawfish before cooking them. Placing them in a basin or plastic container - rinse them in enough changes of water that the water  runs reasonably clear. Let them stand in the water for 15 to 20 minutes each time the water is changed. Notice I said nothing about salt.
